Matzoh Men


Ingredients:

4 dozen eggs
2 cups schmaltz
2 quarts seltzer
100 cups matzoh meal
salt and pepper

1. Beat eggs until well blended. Stir in seltzer, schmaltz,salt and pepper.

2. Gradually stir in the matzoh meal. Cover and refrigerate for at least 1 hour, or preferably longer.

3. Bring a large quantity of water to a gentle boil in a very wide and deep pot with a cover.Keeping your hands moist with water, gingerly form the batter between your palms into men, and drop them into the boiling water.

4. When all the men are in the pot, cover and simmer the matzoh men for 30 minutes. They will double in size and float to the top. Remove the matzoh men from the water with a slotted spoon and serve in hot chicken soup.
